Scallop solterito with quinoa
Fresh Peruvian flavors! We take a classic solterito salad from Arequipa, made with broad beans, corn kernels, paria cheese, onion and tomato, and add our own personal touch: scallops breaded with black and white quinoa, and orange-glazed macre squash. Drizzled with a rocoto-chili-scented vinaigrette and garnished with black olives.
Our best fresh produce. Palm hearts, ripe avocados, candied tomatoes and marinated mushrooms over a bed of lettuces. Seasoned with our own house dressing.
